We hand-cut fresh lemon, lime, orange and clementine peels. We do not use dried or frozen citrus peels, citrus concentrates, or artificial flavors. For the fresh and vibrant citrus notes in Brooklyn Gin, there are no shortcuts.
Using dried juniper berries can impart harsh, piney flavors to gins. We hand-crush juniper to release a burst of sweet and spicy flavors.
Industrial distillation processes usually result in a bland, stale gin. Instead, we first steep our botanicals to release their essential flavors. Then, we distill in small batches in a Carl copper pot still to slowly extract flavor from the fresh citrus peels and botanicals. The copper interacts with the alcohol to remove bitter notes, resulting in a smoother gin with greater complexity.
